INGREDIENTS
2 tablespoons olive oil
2 chicken breasts, (cut into 1 inch cubes)
salt
black pepper
1/2 cup onion, (diced)
1 medium red bell pepper, (ribs and seeds removed and diced)
1 1/2 cups chicken broth
1 envelope taco seasoning
1 teaspoon dried ground cumin
1 (15-ounce) cans petite diced tomatoes, (with juices)
1 (4-ounce) can diced green chilies
1 (15-ounce) can whole kernel corn, drained
1 (15-ounce) can black beans, drained and rinsed
1 cup long grain white rice
1/4 cup cilantro, (chopped)
