2 (5 ounces/142 grams) cans of tuna in extra virgin olive oil
1/2 cup chopped creamy Brie cheese (with rind)
2 tablespoons small capers, drained
1 packed cup chopped parsley
1 teaspoon extra virgin olive oil
1/2 European cucumber a.k.a. English Cucumber, thoroughly rinsed
1 large fennel bulb, thoroughly rinsed
1/2 apricot to garnish, cut into matchsticks or a handful of dark grapes cut in half
2 pinches of salt to taste
