INGREDIENTS
1 cup golden raisins
Boiling water
2 tablespoons olive oil
1 small yellow onion, diced
2 tablespoons fresh rosemary needles, pulverized in a coffee mill or minced very fine (or use ground rosemary)
1 tablespoon cider or white wine vinegar
 1/2 teaspoon kosher salt
 1/2 teaspoon freshly ground black pepper
2 bulbs fennel (also known as sweet anise)
2 large Fuji apples (or your favorite not-so-tart apple)
