INGREDIENTS
2 pounds dried pinto beans (approximately 5 cups), rinsed and sorted
1 medium to large yellow onion, diced
3 cloves of garlic, minced
2 teaspoons of salt (more to taste)
2 teaspoons ground black pepper
1 teaspoon ground cumin powder
1/2 teaspoon crushed red pepper flakes (more or less to taste)
1/4 teaspoon smoked paprika
9+ cups of water
