Ingredients: 1 tablespoon olive oil; 2 cloves garlic, minced; 1/2 cup chopped green onion; 1/2 pound lean ground beef; 2 tablespoons hot chili powder; One 28-ounce can fire-roasted dice tomatoes; One 15-ounce can black beans, rinsed and drained; 1 medium red bell pepper, cored, seeded and diced; 4 carrots, peeled and grated; 1/2 teaspoon brown sugar; Pinch of salt; Cook's Note: For a large party, double the beef.
