french onion soup
This recipe is from What's Your Beef restaurant where I worked as a cook. I made this along with prime rib and house potatoes for dad's bowling banquet where I had received a standing ovation and numerous marriage proposals!

Ingredients
- SOUP
- 8 1/2 quarts water
- 6-7 large yellow onions, chopped
- 2 cups sherry
- 8 ounces beef base
- 5 ounces chicken base
- SOUP CROUTONS
- - bread, stale, cut for mug/crock size
- - margarine, melted
- - parmesan cheese
- - paprika
- TOPPING (FOR 1 MUG/CROCK OF SOUP)
- 1 - soup crouton
- 1 slice swiss cheese
- 1 slice provolone cheese
- - paprika
How To Make french onion soup

Step 1Boil water, add onions, let boil. Add sherry, beef and chicken base, let boil again, then simmer.

Step 2To make soup croutons:spray baking pans with non stick spray Mix together melted butter andparmesan cheese. Lay bread out in single layer on baking pan, pour/brush on butter mixture. Sprinkle on paprika. Place in preheated 400 oven until slightly brown.

Step 3To Serve:pour soup into soup mug/crock Place on top, in order: crouton, swiss cheese, provolone cheese, then sprinkle paprika on top, Place in preheated 400 oven for 3-5 minuets or until cheese has melted over sides of mug/crock.
