Ingredients
- 1 cup Arborio rice
- 2 cups water
- 1/2 lemon rind
- 12 ounces can evaporated milk
- 14 ounces can sweetened condensed milk
- 2 sticks cinnamon (plus more for garnish)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
How To Make arroz con leche

Step 1In a saucepan over medium heat, bring rice, cinnamon sticks, and lemon rind to boil in water. Once boiling, reduce heat to low and cover the rice. Simmer for 10-15 minutes, or until rice is tender and plump.

Step 2Remove lemon rind with a slotted spoon. Over low heat, add the evaporated and sweetened condensed milks. Stir constantly to combine well. Add vanilla and salt and continue to cook on low heat for 7-10 minutes, or until the pudding thickens to desired consistency.

Step 3Remove from heat and serve immediately. Or, store in the fridge in an airtight container
