1¼ cups shortening
½ cup water
½ teaspoon anise seeds
1-inch piece cinnamon stick
1 teaspoon salt
1 teaspoon baking powder
½ cup sugar, plus more for dusting
2 tablespoons ground cinnamon for dusting
For the Pineapple Filling:
2 cups finely chopped, fresh pineapple
¾ cup dark brown sugar or piloncillo, if available
2 tablespoons lemon juice
¼ cup cold water
1½ tablespoons cornstarch
