Emeril's Crawfish Pie

"Crawfish pies aren't always easy to find in New Orleans. They appear at some festivals-principally, the Jazz and Heritage Festival that begins at the end of April. But that's just once a year; why not try these at home?..."

INGREDIENTS
1 1/2 sticks butter
2 cups chopped yellow onions
1/2 cup chopped green bell peppers
1/2 cup chopped red bell peppers
1 cup chopped celery
2 tablespoons minced garlic
2 teaspoons sea salt
1 teaspoon cayenne
1/2 teaspoon black pepper
1/2 cup all-purpose flour
1 cup diced tomatoes
2 pounds peeled crawfish tails
2 tablespoons chopped parsley
