spanish rice & chicken

I made this pretty often as it was a one pot and fast dinner. The recipe was doubled to feed my family of 6.

Ingredients

  • 6.8 ounces rice a roni spanish rice mix
  • 2 tablespoons margarine
  • 14 1/2 ounces diced tomatoes, undrained
  • 2 cups water
  • 1 pound chicken breast,skinless and boneless, cut into 1" pieces

How To Make spanish rice & chicken

  • Step 1
    In a large skillet, combine rice-vermicelli mix and butter or margarine. Sauté over medium heat until vermicelli is golden brown, stirring frequently.
  • Step 2
    Slowly stir in water and Special Seasonings and one 14 1/2 can diced tomatoes and the cut up chicken; bring to a boil.
  • Step 3
    Cover and reduce heat to low. Simmer 15 to 20 minutes or until rice is tender.
