pumpkin cookies
This is a recipe that has taken me awhile to perfect because it also reminds me of my Grandma Lillie's cookies that she used to make, which she did not have a recipe for. These cookies make a great soft cookie. You can also put this recipe in a sheet pan and make bars. Enjoy!

Ingredients
- 2 large eggs
- 3/4 cup oil
- 1 1/2 cups brown sugar, lightly packed
- 15 z cans pumpkin
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg, ground
- 1/2 teaspoon ginger powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup nuts, chopped
- 1 cup golden raisins
- FROSTING
- 3 ounces cream cheese, softened
- 6 tablespoons butter, softened
- 2 cups confectioners' sugar
- 1-2 tablespoon milk
- 1 dash cinnamon
- orange food coloring(optional)
How To Make pumpkin cookies

Step 1In a mixing bowl mix the ingredients according to the order given accept raisins and nuts. Mix thoroughly. Stir in raisins and nuts. Using a cookie scoop or a spoon, drop onto cookie sheet about 1" apart. Bake at 350 for 10-12 minutes.

Step 2For frosting:In a mixing bowl, mix the cream cheese with the butter and then add the powdered sugar, cinnamon and 1 Tablespoon of milk, mix, if you need more milk add a teaspoon at a time to make it spreading consistency. Frost cookies when they are cool.
