INGREDIENTS

1.5 cups dried black eyed peas, rinsed

1 cup finely chopped onion

1 cup finely chopped green bell pepper
•
1 cup finely chopped celery
•
3 garlic cloves, minced
•
1 Tbsp tomato paste
•
2 tsp smoked paprika
•
1 tsp dried thyme
•
Pinch cayenne
•
1/4 tsp liquid smoke (optional)
•
Salt, black pepper to taste
•
3 cups water or veggie broth (comes out great with *Better Than Bouillon vegetable base
•
2 Tbsp grapeseed oil or avocado oil or more veggie broth/water, for sauteing in step 2
•
1/4 cup chopped cilantro
•
Your favorite hot sauce, to taste
