1 tablespoon butter

1 red pepper, finely diced

6 green onions, sliced thinly
•
1 large carrot, diced
•
1 large clove of garlic, pressed through a garlic press
•
pinch of salt
•
3 tablespoons creamy peanut butter
•
3 tablespoons low sodium soy sauce
•
1 tablespoon Sriracha (or less if you want less spicy)
•
2 cups shredded or cubed rotisserie chicken
•
1/2 cup chopped roasted, salted peanuts
