INGREDIENTS
4- 1" to 1 1/4" thick cod fillets (about 175g | 6oz each)
2 tbsp ghee, (store-bought or homemade)
1 tbsp dry white wine or vermouth (use caper brine to keep squeaky clean/alcohol free)
1 large clove garlic, minced
1/2 tsp salt (I use Himalayan salt)
1/4 tsp ground white pepper
1 tbsp finely chopped fresh parsley
2 tbsp capers
2 lemons
