INGREDIENTS

3 Tbsp canola or other high smoke point oil, divided

1 tsp sesame oil
•
1 medium carrot, peeled and diced small
•
4 cloves minced garlic (about 2 tsp)
•
1 cup finely chopped broccoli
•
1 cup frozen green peas
•
1/4-1/2 tsp crushed red pepper (use less or omit, if you’re sensitive to heat)
•
1/2 tsp ground ginger
•
2 Tbsp soy sauce
•
4 cups cold cooked rice (it's not an exact science -- use what you have!)
•
1-1.5 cups leftover chopped cooked pork
•
2 eggs, beaten
•
2 chopped green onions
•
Sriracha or chili garlic sauce to taste (optional)
