1-3 leeks, cut off dark green part, cut in half, washed, and cut into small pieces (I had small leeks so I used 3).

4 carrots, clean, skins on, sliced
•
4 celery stalks, diced
•
1 (16 ounce) can or fresh tomatoes, diced (I used a can of Organic Tomatoes)
•
2 cups dried pinto beans, rinsed
•
6 cups fresh kale, thinly sliced
•
1 tablespoon dried Italian seasoning
•
Salt
•
Pepper
•
8 cups vegetable stock or broth (Swanson Broth or Stock coupons)
•
2 cloves of garlic, crushed
