INGREDIENTS

1 tbsp olive oil

2 onions, finely chopped

4 celery stalks, diced

2 carrots, peeled and diced

4 cloves garlic, minced (I only used 2)

1 tsp caraway seeds (I left these out)
•
1/2 tsp salt
•
1/2 tsp cracked black peppercorns
•
1 - 28 oz can chopped tomatoes with juice
•
1 tbsp coconut sugar (regular sugar is fine too)
•
3 medium beets, peeled and diced
•
1 potato, peeled and diced
•
4 cups beef or vegetable stock
•
1 tbsp red wine vinegar
•
4 cups finely shredded cabbage
•
sour cream
•
finely chopped dill
