For crushing the peanuts, my go-to method is placing the nuts in a clean dish towel, covering them and then using a small skillet to gently smash them. 1 teaspoon sugar
1 teaspoon freshly grated ginger
1 tablespoon sesame oil
1 tablespoon sambal or other chili-garlic sauce
1 teaspoon fish sauce
2 cups shredded cabbage (about ¼ head)
4 scallions, light green and white parts thinly sliced
½ cup roasted, unsalted peanuts
