3 large boneless, skinless chicken breasts, cut in half lengthwise (to form two cutlets) OR 6 small frozen chicken breast portions (thawed).

12 slices good deli ham or 6 slices of prosciutto
•
6 slices of Swiss or gruyere cheese
•
1 cup fresh breadcrumbs
•
2 tablespoons butter, melted

For the Cream Sauce
•
2 tablespoons butter
•
2 tablespoons all-purpose flour
•
1 cup milk
•
1/2 cup white wine (optional) OR chicken stock OR water
•
1/2 cup finely grated Swiss cheese
