1 Tablespoon olive oil
4 ounces chorizo sausage
½ cup stone-ground grits
½ cup multi colored quinoa
1½ cups chicken stock
1 cup onion (½" dice)
1 red bell pepper (cut into ½" strips)
12 ounces large shrimp (thawed and shells removed)
4 ounces Dubliner cheese ((About 1 cup shredded) or any cheese you like)
½ cup heavy cream
