1 1/2 lbs. boneless skinless chicken breasts (sliced into bite sized pieces)
1 1/2 Tbsp cornstarch
1/4 tsp kosher salt
1/4 tsp black pepper
3 Tbsp vegetable oil (canola or peanut are good substitutes) (divided)
3 cloves garlic (minced)
1 Tbsp grated fresh ginger ((3/4 tsp dried ginger can be substituted))
1/2 cup water
1/2 cup reduced sodium soy sauce
1/4 cup bourbon
1/4 cup reduced sodium chicken broth
3 Tbsp apple juice
2 1/2 Tbsp ketchup
1 Tbsp rice vinegar ((apple cider vinegar is a good substitute))
1/2 cup packed light brown sugar
1/4 tsp onion powder
1/4 tsp red pepper flakes
1 Tbsp cornstarch
1 1/2 Tbsp cold water
