mom's rolled sugar cookies
This was my Mom's recipe and is my favorite Christmas cookie, but I have made these for your school parties at different times of the year...just used the appropriate cookie cutter for the season.

Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons lemon rind, grated
- 2 1/4 teaspoons baking powder
- 3/4 teaspoon salt
- 3 cups flour
How To Make mom's rolled sugar cookies

Step 1Cream the butter and sugar together in a mixing bowl for about 5 minutes.

Step 2Add eggs, vanilla, lemon rind, mix. Add baking powder, salt and flour, mix. Cover bowl with plastic wrap and chill dough.

Step 3Divide dough into 3 parts, cover the other two and put back in refrigerator. Working with other part, roll out on a floured area with a floured rolling pin to about 1/4" thickness. Cut with floured cookies cutters and place on parchment lined cookie sheet. Decorate the cookies with sugars and sprinkles of choice. Bake at 350 for about 10 minutes or lightly browned on the bottom of cookie. Continue with the rest of the dough. The remainder of the dough that was used for each cutting, you can chill that and use it after you are finished with all of the fresh dough. I have used it to the 3rd rolling, but no more because the cookies will be tough.
