1 cup frozen diced onion, thawed

2 tablespoons minced garlic (or more if you like it really garlicky!)

4 ounces (about 1 cup) shredded mozzarella cheese

1/2 cup grated Parmesan cheese, divided (plus additional for serving)

1 lb. large (31-40 count) peeled and deveined shrimp (frozen is fine), thawed

Chopped fresh parsley
