Dulce de Leche Chocolate Pecan Pie

INGREDIENTS
1 1/4 cups all-purpose flour (plus more to work the dough)
Pinch of kosher or sea salt
1 teaspoon granulated sugar
1 stick (or 1/2 cup) cold unsalted butter (diced)
1/4 cup cold water
3 eggs
1 cup Dulce de Leche or Cajeta
1/2 cup dark brown sugar
1/2 cup light corn syrup
4 tablespoons unsalted butter (melted)
1/2 teaspoon kosher or sea salt
2 cups (or 8 ounces) pecan halves (coarsely chopped)
2 ounces (or 1/3 cup) chopped bittersweet chocolate
