Dublin Coddle

INGREDIENTS
6 slices thick-cut bacon, chopped into 1-inch pieces
2 lbs bratwurst
1 head green cabbage, cut into 6 wedges
2 lbs Yukon Gold potatoes, halved or quartered
2 yellow onions, sliced
2 cups chicken broth
2 teaspoons dried thyme
2 tablespoons apple cider vinegar
Kosher salt and freshly ground black pepper, to taste
Fresh parsley, chopped, for garnish
