    2/3 cup coconut milk
  • ·
    1 to 2 mint leaves
  • ·
    1 1/2 cups frozen blueberries
  • ·
    1 lemon, squeezed
  • ·
    2 tbsp. vanilla greek yogurt
  • ·
    3 tbsp. honey

How to Make Lemony Blue Smoothie


  1. Blend coconut milk and mint leaves together til mint is thoroughly minced
  2. Add remaining ingredients to blender. Blend til desired consistency is reached, taking care not to over blend. Over blending will result in a thinner consistency.
  3. Serve at once with a mint or lemon garnish. Enjoy.
