This Rhubarb Ice Tea is a tangy-sweet beverage. Plus, it actually is made without tea. But it's very good and quite refreshing.

Ingredients
- 8 cups - diced rhubarb, can use frozen rhubarb (*see note)
- 8 cups - water
- 1-1/2 cups - sugar
How To Make rhubarb ice tea

Step 1In a large heavy saucepan, add the rhubarb and water.

Step 2Bring to a boil, then reduce the heat, and simmer for 1 hour.

Step 3Strain the rhubarb, then add to a heat-proof pitcher.

Step 4Add the sugar; stir well, and allow to cool before placing in the refrigerator.

Step 5Chill in the refrigerator until ready to serve.

Step 6When ready to serve; pour the chilled tea in glasses filled with ice.

Step 7*Note: If making this tea using frozen rhubarb, simmer (covered) for about 1 hour and 30 minutes; stirring occasionally.
