I got this recipe from my Holiday Entertaining cookbook. This juice combination is so tasty and refreshing. A great everyday drink or for parties. VARIATION To make this an Adults Only drink: Add vodka, rum or gin (I've used regular & flavored vodkas like citrus, raspberry, etc). I also like to jazz up the ice cubes by placing lemon zest & pomegranate seeds in each section of the ice cube tray(s), then fill them with water (or cranberry juice) and freeze until solid.

Oh so fresh and fruity! The Crew and I had a tough time finding Meyer lemons out of season (Dec-April), so we used regular lemons instead. Well, let me tell you, that didn't hurt the recipe a bit! The flavors are simply delightful.

Ingredients For pomegranate frost

  • ice cubes or pomegranate ice cubes (see my variation note)
  • 12 fl
    ounces pomegranate juice
  • 12 fl
    ounces cranberry juice
  • 4 fl
    ounces fresh meyer lemon juice
  • 4 fl
    ounces fresh lime juice
  • 24 fl
    ounces sparkling water
  • 8
    fresh mint leaves, finely shredded

Try letting the prepared drink sit a bit to let the flavors meld, then strain to remove the mint leaves.

    Fill a pitcher half full with the ice cubes. Add the pomegranate juice, cranberry juice, lemon & lime juices, 12 fl oz. of the sparkling water (save the rest for another batch), and the shredded mint leaves. Stir until well blended.

    Fill 6 tall glasses with ice. Pour the mixture into the glasses and serve.
