phuket lemonade
I've been to Thailand, but never to Phuket. I dream of sitting in a beachside cabana, Margarita's flowing at my command. Oh, wait... this is Thailand. Ok - I dream of Freedom Beach, a beachside cabana, and tropical lemonade flowing at my command. Yesssss... TIME DOESN'T INCLUDE STEEPING TIME FOR THE INFUSED SIMPLE SYRUP.

Ingredients
- FOR THE LEMONGRASS SYRUP
- 2 cups water
- 2 cups sugar
- 3 large limes, zested and juiced
- 3 stalks lemongrass, whites only, halved
- 1 2 inch piece of ginger, peeled and cut into 1/4 inch slices, bruised
- 1 good handful of kaffir lime leaves, torn
- 1 large handful mint leaves
- FOR THE LEMONADE (SINGLE SERVING)
- shaved cucumber strip (see directions)
- 1/4 cup lemon juice, freshly squeezed
- 1/4 cup lemongrass syrup, or to taste
- 8 ounces water ( or 6 ounces if using soda or prosecco)
- soda water or prosecco, optional
How To Make phuket lemonade

Step 1Make the syrup by combining all of the ingredients in a small heavy saucepan. Bring to a boil, then reduce heat and simmer for 3 minutes. Remove from heat and let steep for 2 hours. Pour into a clean glass container. This will make more than you need, but you'll be glad you have it!

Step 2Prepare the glass: Wash the English cucumber well. Take a slice off lengthwise to expose the flesh. Use a vegetable peeler to cut a long thin strip of cucumber. Swirl the cucumber strip around the inside of the glass, about an inch below the rim. Allow a little bit of overlap, and cut off the excess. Set aside.

Step 3Pour the freshly squeezed juice into a large measuring cup. Add the water. and 3-4 tablespoons of the lemongrass syrup, adjusting to the intensity or sweetness you desire.

Step 4Carefully fill the prepared glass with ice so you don't dislodge the cucumber strip. Pour the lemonade into the glass. Garnish with a sprig of mint and enjoy!

Step 5Note: if you want it a little fizzy, use only 6 ounces of water. Follow step #4, but top off with soda water or prosecco. This also tastes good with gin.
