This recipe is from Taste of Home's Holiday Recipe Card Collection magazine for 2003. This is a lovely recipe for winter and especially, holiday time. Take your cup of cheer to sit by the fireside, while watching your special holiday show. (Sugar-free-option, my change.)

Ingredients

  • 2 qt
    cold milk
  • 1 pkg
    (3.4 ounces) instant french vanilla or vanilla pudding mix*
  • 1/4 c
    sugar*
  • 1 tsp
    ground nutmeg
  • 1 tsp
    vanilla extract
  • 1/8 tsp
    salt (optional)
  • 1 c
    heavy whipping cream
  • ·
    additional nutmeg (optional)
  • ·
    *use sugar-free products for substitutions, to make diabetic friendly (my change)

How to Make Mock Eggnog

Step-by-Step

  1. In a mixing bowl, beat milk and pudding mix (regular or sugar-free), on low speed for 2 minutes. Beat in the sugar (or sweetener), nutmeg, vanilla, and salt (if using).
  2. In another mixing bowl, beat cream, until thickened, about 3 minutes. Stir into pudding mixture. Refrigerate, until serving.
  3. Sprinkle with additional nutmeg, if desired. Makes 2 1/2 quarts, about 10 servings.
