Something a bit exotic added to something very common in the spring and summer. Totally delicious.

Ingredients

  • 8 stalks red rhubarb, cut into 3-inch lengths
  • 8 cups water
  • 4 tablespoons loose white tea leaves to taste
  • - sugar to taste (can use a sugar sub)
  • - fresh mint sprigs, for garnish

How To Make iced white tea with rhubarb

  • Step 1
    In a large covered saucepan, combine rhubarb and 8 cups water; bring to a boil lower heat and simmer on low for 1 hour. Add the tea 10 mins before you will separate the liquid.
  • Step 2
    Strain the liquid from the rhubarb and tea bags, add sugar to taste, stirring to dissolve, and allow to cool. Serve over ice with a sprig of mint.
