Ingredients
- 8 stalks red rhubarb, cut into 3-inch lengths
- 8 cups water
- 4 tablespoons loose white tea leaves to taste
- - sugar to taste (can use a sugar sub)
- - fresh mint sprigs, for garnish
How To Make iced white tea with rhubarb

Step 1In a large covered saucepan, combine rhubarb and 8 cups water; bring to a boil lower heat and simmer on low for 1 hour. Add the tea 10 mins before you will separate the liquid.

Step 2Strain the liquid from the rhubarb and tea bags, add sugar to taste, stirring to dissolve, and allow to cool. Serve over ice with a sprig of mint.
