Horchata is a non alcoholic drink that is made with rice... I first had this in a mexican restaurant years ago and absolutely loved it!! I found this recipe for it not too long ago and on a hot summer day it's really very refreshing!

makes 1 quart (approximately)

1 c
uncooked rice
4 1/2 c
warm water
3/4 c
1 tsp
vanilla extract

How to Make Horchata


  • 1In a large bowl combine rice and water and let soak overnight.
  • 2Pour into a blender and puree till smooth, then strain through a fine mesh sieve. Return the strained liquid to the blender and puree again. Strain through a wet discloth or fine cheese cloth into a pitcher.
  • 3Rinse out the blender to remove any residue, then pour the liquid back into the blender with the vanilla and sugar. Blend on high till sugar is fully disolved.
  • 4Refrigerate till cold, and then serve over ice.
