Horchata is a non alcoholic drink that is made with rice... I first had this in a mexican restaurant years ago and absolutely loved it!! I found this recipe for it not too long ago and on a hot summer day it's really very refreshing!

Ingredients
- 1 cup uncooked rice
- 4 1/2 cups warm water
- 3/4 cup sugar
- 1 teaspoon vanilla extract
How To Make horchata

Step 1In a large bowl combine rice and water and let soak overnight.

Step 2Pour into a blender and puree till smooth, then strain through a fine mesh sieve. Return the strained liquid to the blender and puree again. Strain through a wet discloth or fine cheese cloth into a pitcher.

Step 3Rinse out the blender to remove any residue, then pour the liquid back into the blender with the vanilla and sugar. Blend on high till sugar is fully disolved.

Step 4Refrigerate till cold, and then serve over ice.
