How to Make Horchata
- In a large bowl combine rice and water and let soak overnight.
- Pour into a blender and puree till smooth, then strain through a fine mesh sieve. Return the strained liquid to the blender and puree again. Strain through a wet discloth or fine cheese cloth into a pitcher.
- Rinse out the blender to remove any residue, then pour the liquid back into the blender with the vanilla and sugar. Blend on high till sugar is fully disolved.
- Refrigerate till cold, and then serve over ice.
