horchata
This soothing rice beverage is enjoyed throughout Mexico and Central America. Typically milk and rice are allowed to steep for several hours before serving, but the widespread availability of rice milk has sped up the process. From Vegetarian Times Low-Fat & Fast Mexican.

How To Make horchata
-
Step 1Combine the rice milk, rice, honey, and cinnamon in a blender or a food processor fitted with a steel blade and process until the mixture is smooth (like a milk shake), about 10 seconds.

Step 3Salud!
-
Step 4Helpful Hints: Rice milk is a good beverage to serve with spicy dishes - it cools off the palate. For 2 cups of cooked rice, combine about 3/4 cup uncooked rice with 1 1/2 cups water and cook, covered, until tender.
