This soothing rice beverage is enjoyed throughout Mexico and Central America. Typically milk and rice are allowed to steep for several hours before serving, but the widespread availability of rice milk has sped up the process. From Vegetarian Times Low-Fat & Fast Mexican.

Ingredients For horchata

  • 4 c
    rice milk
  • 2 c
    cooked white rice (can use brown rice)
  • 1/4 c
    honey
  • 1/2 tsp
    ground cinnamon

How To Make horchata

    Combine the rice milk, rice, honey, and cinnamon in a blender or a food processor fitted with a steel blade and process until the mixture is smooth (like a milk shake), about 10 seconds.

    Pour the liquid through a fine sieve, reserving the sweetened liquid. Serve over ice.

    Helpful Hints: Rice milk is a good beverage to serve with spicy dishes - it cools off the palate. For 2 cups of cooked rice, combine about 3/4 cup uncooked rice with 1 1/2 cups water and cook, covered, until tender.
