Makes about 2/3 cup of blueberry magic
Ingredients
- 1 1/2 cups blueberries (or any berry)
- 2-3 tablespoons water
- 2 tablespoons honey
- 1 teaspoon vanilla
- 1-2 tablespoon lemon juice
- club soda
How To Make blueberry honey vanilla sodas

Step 1Simmer berries, water, honey, vanilla, and lemon over low heat for about 20 minutes. When berries are all soft and mushy, pull from heat, and carefully and thoroughly mash berries with a potato masher.

Step 2Place a mesh strainer over a glass jar.

Step 3Working in small batches, pour berry mixture into strainer and mash all juice out with a big spoon.

Step 4Keep all the berry bits to spread onto a toasted English muffin or to stir into your yogurt! I love that this is a double whammy!

Step 5Spoon about 1 1/2 TB into a tall glass filled with ice, and top with club soda. This works great for champagne spritzers too.
