oatmeal & cocoa breakfast for a cold morning

On those frigid winter mornings in Indiana, before school my mother would prepare a steaming bowl of oatmeal for me, laced with plenty of sugar. To accompany it, she would make a mug of hot, chocolaty cocoa with one or two of those huge marshmallows floating on top. Ingredients

  • HOT OATMEAL:
  • 1 3/4 cups water (or milk for a creamier oatmeal)
  • 1 cup quaker quick oats
  • dash salt
  • COCOA:
  • 1/3 cup cocoa powder
  • 1/3 cup sugar
  • dash salt
  • 1/2 cup water
  • 3 1/2 cups milk
  • 1/2 teaspoon vanilla

How To Make oatmeal & cocoa breakfast for a cold morning

  • Step 1
    For the oatmeal: in a medium saucepan, bring the water (or milk) and salt to a boil. Stir in oats. Cook about 1 minute, stirring occasionally.
  • Step 2
    Serve with brown sugar and/or fruit of your choice.
  • Step 3
    For the cocoa: In a saucepan, mix cocoa, sugar and salt; add water. Bring to boiling, stirring constantly. Boil 1 minute. Stir in milk; heat to boiling point (do NOT boil). Add vanilla; beat with rotary beater just before serving. Float two large marshmallows on top of each serving. Makes about 4 servings.
