This soup is wonderful and I keep getting asked to share the recipe. I had had gasyric bypass surgery and was not allowed to eat solid food for a few months. I love brocolli and the doctor told me to drink as much protein as I could.and eat healthy. What is healthier than brocolli???? This recipe came from what I had in the house and to save me from drinking yet another protein shake. Since then I have made this soup dozen's of times and I am happy to say I have lost 170 pounds so far and I love brocolli even more than before. I will never get sick of it especially if prepared this way.
1Add water and broth together in a stock pot or slow cooker. Add all your brocolli and thyme. Cook on low heat until brocolli is soft. Add all the 1/2 &1/2 to pot slowly. Let cool and use an wisk to blend until smooth making sure to leave some pieced of brocolli pieces to chew.
