From The Coconut Miracle Cookbook with several additions of mine. You can add more banana if desired-I prefer a subtle banana flavor in my smoothies.

Ingredients For coconut-pineapple smoothie for 2

1 ccoconut milk (best flavor with coconut milk that is not reduced fat)

2 Tbspcoconut oil

1 cfresh pineapple, cubed (or canned unsweetened pineapple)

1 tsporange zest

1 cfreshly squeezed orange juice

1/3-1/2 smbanana (reduced from 1 whole banana)

1 tspfreshly grated ginger, or more to taste

1/2 tspfreshly grated turmeric or 1/4 teaspoon ground turmeric

1/4 tspvanilla paste or vanilla extract

3/4 ccrushed ice, or more if desired
How To Make coconut-pineapple smoothie for 2

1Place all the ingredients in a blender and blend on HIGH speed until smooth. Start by adding 1/4 cup crushed ice (or filtered water) then more if you want a thinner smoothie. Also, it is not necessary to melt the coconut oil first. The oil is soft enough to blend thoroughly.
