iced ginger chai
This Iced Ginger Chai is heavy on the ginger, cardamom and black pepper which give it a real spark. It's not in the recipe but you may dilute the concentrate some if you wish. The long prep time is really just chilling.

Ingredients
- 2 quarts pure water
- 1/2 cup finely chopped fresh ginger
- 10 - cardamon pods
- 5 - whole cloves
- 10 - whole peppercorns
- 1/2 teaspoon fennel or anise seed
- 1/4 cup organic loose rooibos tea (or your favorite tea)
How To Make iced ginger chai

Step 1Place all ingredients in a pot and bring to boil

Step 2Reduce and leave pot on stove with mixture at a simmer for 30 minutes

Step 3Turn off heat; allow mixture to remain in (covered) pot overnight to continue steeping without heat

Step 4Strain mixture into a 1 quart jar –you will have between 3-4 cups of chai concentrate

Step 5Fill a glass with ice, 1 cup chai concentrate and ¼ cup almond milk (or milk of your choice)

Step 6Add sugar (Splenda or honey) to taste (optional) and serve over ice with a smile.
