kights' killer coffee liqueur (lower carb)

We love coffee liqueurs, but they're usually so full of sugar that they're hard to enjoy (especially with a diabetic in the house). This recipe, which uses Stevia In The Raw zero calorie sweetener, is quick, easy, tasty and perfect to give as a gift! We had several bottles of caramel schnapps left from our annual Christmas fondue party, so we decided to experiment (good call!). The hint of cocoa helps to smooth the bite of the coffee, too. Cheers!

Ingredients

  • 6 quarts water
  • 3 cups instant coffee powder
  • 4 1/2 cups stevia in the raw zero calorie sweetener
  • 6 ounces pure vanilla extract
  • 5 tablespoons cocoa powder
  • 3 cups caramel schnapps
  • 1/2 gallon everclear 190 proof grain alcohol

How To Make kights' killer coffee liqueur (lower carb)

  • Step 1
    In stockpot, mix water, coffee powder, cocoa and stevia. Bring to just boiling. Let cool completely, stirring every so often.
  • Step 2
    When mixture has cooled, add vanilla extract, caramel schnapps and Everclear.
  • Step 3
    You can serve immediately or let the flavors blend - equally good! Serve over ice. Great topped with half and half!
  • Step 4
    Store in sterilized bottle(s) in cool, dark spot. Makes wonderful gifts :)
