Doing some celebrating today, this is what a few of my friends and I came up with...I wanted to use up some fresh pineapple, so threw that in as well as the pineapple juice...we all loved it...try it on your friends sometime...add more coconut if you prefer, we enjoyed tasting the fresh pineapple in this one...

Ingredients

  • 2 c
    ice
  • 2 oz
    light rum
  • 1/3- 1/2 c
    fresh pineapple chunks
  • 2 oz
    each - coconut milk & cream of coconut
  • 2 oz
    pineapple juice
  • 1/4
    of a lime - juiced

How to Make Fresh Pina Colada ~ Cassies

Step-by-Step

  1. Place all ingredients into your high powered blender ( making sure it can crush the ice) Blend until smooth.

    Pour into some pretty glasses and enjoy!
