caribbean orange liqueur
A personal creation that originally used vodka but I like this much better. Use it anyway you like. Sip it straight, in a mixed drink or in recipes. "cooking" is all stand time.

How To Make caribbean orange liqueur
-
Step 1Pare very thinly the bright-colored rind from the oranges (no white). Blot the peel on paper towels to remove any excess oil. Put peel in a 4 cup screw-top jar. Add 2 cups rum. Close jar.
-
Step 2Store in a cool, dark place for 2 days or until the rum has absorbed the flavor.
-
Step 3Remove peel and add remaining rum. Close jar and add remaining cup of rum. Close the jar and store in a cool dark place at least 1 month to age.
