The cucumber adds to the complexity of this refreshing drink - don't skip it! If you like to add a bit of spiciness (always SO GOOD with watermelon!) use the optional chili rim.

Ingredients For watermelon margarita

3/4 cwatermelon chunks

3 sliceseedless cucumber, 1/8 inch thick

6mint leaves, large

2 oztequila
-
2 Tbspfresh lime juice

1 Tbspsimple syrup, to taste

2 tspcointreau or triple sec
- OPTIONAL CHILI RIM:

1 tspancho chili powder
-
1 tspgranulated sugar

1 tspkosher salt
How To Make watermelon margarita

1Place the watermelon, cucumber slices, and mint in a mesh colander. Put the colander over a bowl. Using a big spoon or muddler, mash to extract as much juice as possible. Pour into a cocktail shaker.

2Add the tequila, lime juice, simple syrup and Contreau to the shaker. Add ice. Shake until frosty, about 20 seconds.

3Pour into a tall glass filled with ice. Garnish, if desired with a wedge of watermelon and a sprig of mint.

4If using the optional chili rim: combine the ingredients on a small plate. Rub lime juice (or water) on the rim of your glass. Dip the rim in the chili-salt.
