The cucumber adds to the complexity of this refreshing drink - don't skip it! If you like to add a bit of spiciness (always SO GOOD with watermelon!) use the optional chili rim.

Ingredients
- 3/4 cup watermelon chunks
- 3 slices seedless cucumber, 1/8 inch thick
- 6 mint leaves, large
- 2 ounces tequila
- 2 tablespoons fresh lime juice
- 1 tablespoon simple syrup, to taste
- 2 teaspoons cointreau or triple sec
- OPTIONAL CHILI RIM:
- 1 teaspoon ancho chili powder
- 1 teaspoon granulated sugar
- 1 teaspoon kosher salt
How To Make watermelon margarita

Step 1Place the watermelon, cucumber slices, and mint in a mesh colander. Put the colander over a bowl. Using a big spoon or muddler, mash to extract as much juice as possible. Pour into a cocktail shaker.

Step 2Add the tequila, lime juice, simple syrup and Contreau to the shaker. Add ice. Shake until frosty, about 20 seconds.

Step 3Pour into a tall glass filled with ice. Garnish, if desired with a wedge of watermelon and a sprig of mint.

Step 4If using the optional chili rim: combine the ingredients on a small plate. Rub lime juice (or water) on the rim of your glass. Dip the rim in the chili-salt.
