The cucumber adds to the complexity of this refreshing drink - don't skip it! If you like to add a bit of spiciness (always SO GOOD with watermelon!) use the optional chili rim.

Ingredients

  • 3/4 cup watermelon chunks
  • 3 slices seedless cucumber, 1/8 inch thick
  • 6 mint leaves, large
  • 2 ounces tequila
  • 2 tablespoons fresh lime juice
  • 1 tablespoon simple syrup, to taste
  • 2 teaspoons cointreau or triple sec
  • OPTIONAL CHILI RIM:
  • 1 teaspoon ancho chili powder
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt

How To Make watermelon margarita

  • Step 1
    Place the watermelon, cucumber slices, and mint in a mesh colander. Put the colander over a bowl. Using a big spoon or muddler, mash to extract as much juice as possible. Pour into a cocktail shaker.
  • Step 2
    Add the tequila, lime juice, simple syrup and Contreau to the shaker. Add ice. Shake until frosty, about 20 seconds.
  • Step 3
    Pour into a tall glass filled with ice. Garnish, if desired with a wedge of watermelon and a sprig of mint.
  • Step 4
    If using the optional chili rim: combine the ingredients on a small plate. Rub lime juice (or water) on the rim of your glass. Dip the rim in the chili-salt.
