Just another refreshing way to use some early summer rhubarb! Can leave off the hard liquor and increase the Prosecco, if you like.

Ingredients
- 6-8 ounces gin or vodka
- 1/2 cup fresh lemon juice
- 12 ounces prosecco or another sparkling white wine/
- 1 cup rhubarb syrup
- 6 slices lemon, for garnish
- ice
How To Make rhubarb fizz

Step 1Combine vodka or gin, syrup, and lemon juice in a pitcher and stir to combine.

Step 2Divide among ice-filled glasses and top off each with 2 ounces Prosecco. Stir gently and garnish with lemon rounds. Serve immediately.
