Raspberry Soju Cocktail

The cocktail blends raspberries and Korea’s soju – a sake-like spirit – to great effect.

  • 1 c
    fresh or frozen raspberries, defrosted, plus extra to serve
  • 2 c
    soju liquor
  • 1/4 c
    raspberry liquor
  • 1 Tbsp
    lemon juice, fresh
  • 2 c
    store-bought lemonade
  • 2 c
    tonic water

How to Make Raspberry Soju Cocktail


  1. Blend raspberries until smooth, then pass through a fine sieve (discard seeds).
  2. Combine the raspberry purée with soju, raspberry liqueur and lemon juice and stir well to combine.
  3. Fill 6 tall glasses with ice, then divide the raspberry mixture between the glasses.
  4. Top with equal amounts of lemonade and tonic water and garnish with a few raspberries.
