Ingredients

  • - 1 cup fresh raspberries
  • - 1/3 cup sugar
  • - 12 mint leaves
  • - 8 tesp. sugar
  • - 1/4 cup light rum
  • - crushed ice
  • - 4 splash of club soda
  • - fresh raspberries, thin lime wedges and mint leaves for garnish

How To Make raspberry mojitos

  • Step 1
    Bring 1 cup raspberries and 1/3 cup sugar to boil in small pan. Cook for 10 minutes, stirring occasionally. Press through a strainer to remove seeds. Put three mint leaves, one fourth of the lime juice and 2 t. sugar in each of four glasses; crush mint with a spoon. Add 1 T. of the rum and 1 T. of the raspberry syrup to each glass and mix well. Add crushed ice and a splash of club soda to each and stir to mix. Garnish with skewered fresh raspberries, lime wedges and additional mint leaves. Serves 4 Big Taste of Little Rock
