prickly pear margarita

While reading about all the different flavors of margaritas, one particular margarita--the Prickly Pear Margarita, a favorite in New Mexico--received so many glowing comments. So I had to give it a try. And yes, it's every bit as delicious as everyone said it would be. I tried a few recipes that were all pretty similar, but this one stood out as our favorite because all the ingredients were in the perfect amounts to produce a great margarita. I hope you enjoy it, too.

Ingredients

  • 3 ounces tequila blanco
  • 1/2 ounce cointreau
  • 1 1/2 ounces lime juice
  • 2 ounces prickly pear cactus syrup
  • - coarse salt or coarse sugar, for glass rim
  • - kumquat, for garnish
  • - curled lime peel, for garnish

How To Make prickly pear margarita

  • Step 1
    Combine the tequila, Cointreau, lime juice and pear syrup in a cocktail shaker. Shake vigorously to mix well.
  • Step 2
    Wet the rim of a margarita glass and dip into salt or sugar (or use a salt/sugar mix).
  • Step 3
    Pour margarita into glass over ice. Garnish with a kumquat and a curled piece of lime peel, and serve.
