While reading about all the different flavors of margaritas, one particular margarita--the Prickly Pear Margarita, a favorite in New Mexico--received so many glowing comments. So I had to give it a try. And yes, it's every bit as delicious as everyone said it would be. I tried a few recipes that were all pretty similar, but this one stood out as our favorite because all the ingredients were in the perfect amounts to produce a great margarita. I hope you enjoy it, too.

Ingredients

  • 3 oz
    tequila blanco
  • 1/2 oz
    cointreau
  • 1 1/2 oz
    lime juice
  • 2 oz
    prickly pear cactus syrup
  • ·
    coarse salt or coarse sugar, for glass rim
  • ·
    kumquat, for garnish
  • ·
    curled lime peel, for garnish

How to Make Prickly Pear Margarita

Step-by-Step

  1. Combine the tequila, Cointreau, lime juice and pear syrup in a cocktail shaker. Shake vigorously to mix well.
  2. Wet the rim of a margarita glass and dip into salt or sugar (or use a salt/sugar mix).
  3. Pour margarita into glass over ice. Garnish with a kumquat and a curled piece of lime peel, and serve.
