Ingredients For peach alexanders

  • 5 Tbsp
    heavy cream, divided
  • 1 oz
    white chocolate, finely chopped
  • 1 c
    frozen peaches
  • 2 oz
    each peach schnapps and brandy
  • 1 Tbsp
  • 1/8 tsp
    ground cinnamon
  • 1 c
    vanilla ice cream, about 3 scoops
  • mint sprigs for garnish, if desired

How To Make peach alexanders

  • 1
    Beat 4 T. cream in a bowl with hand mixer to medium peaks. Mix remaining 1 T. cream and white chocolate in a bowl; Heat in microwave until almost melted, about 20 seconds. Add white chocolate mixture and vanilla to whipped cream. Continue to whip until mixed. Set aside, Puree peaches, Schnapps, brandy, sugar and cinnamon in a blender until smooth. Add ice cream and continue to puree until mixed. Pour ice cream mixture into 2 glasses, top with whipped cream and garnish with mint sprigs. Makes 2 drinks.
