Ingredients
- 5 tablespoons heavy cream, divided
- 1 ounce white chocolate, finely chopped
- 1 cup frozen peaches
- 2 ounces each peach schnapps and brandy
- 1 tablespoon sugar
- 1/8 teaspoon ground cinnamon
- 1 cup vanilla ice cream, about 3 scoops
- - mint sprigs for garnish, if desired

Step 1Beat 4 T. cream in a bowl with hand mixer to medium peaks. Mix remaining 1 T. cream and white chocolate in a bowl; Heat in microwave until almost melted, about 20 seconds. Add white chocolate mixture and vanilla to whipped cream. Continue to whip until mixed. Set aside, Puree peaches, Schnapps, brandy, sugar and cinnamon in a blender until smooth. Add ice cream and continue to puree until mixed. Pour ice cream mixture into 2 glasses, top with whipped cream and garnish with mint sprigs. Makes 2 drinks.
