Ingredients For old sussex anniversary mead

  • 6 lb
    light floral honey
  • 2 1/2 gal
    spring water
  • 4 stick
    cinnamon sticks
  • 8
  • 3 tsp
  • 1 oz
    fresh yeast

How To Make old sussex anniversary mead

  • 1
    Combine honey and water in large pan.Heat till it starts to boil,add spices and reduce heat to low. Simmer until reduced to six pints of liquid remains.

    Strain and pour into a earthen ware pot and allow to cool.When cool add one ounce of fresh yeast and stir. Allow to ferment for three days.When fermentation is over pour into bottles and seal. Allow to age for one year before drinking.

    You can use what ever spices you like best and different amounts to suit your taste.
