Ingredients

  • 10 large lemons
  • 1 - 750 milliliter vodka
  • 1 1/3 cups sugar
  • 2 1/2 cups water

How To Make limoncello

  • Step 1
    Scrub lemons with a vegetable brush. Using a vegetable peeler, carefully cut away enough yellow peel away from the lemon to make 2 cups. Be careful to not cut into the white pith.
  • Step 2
    In a gallon jar place lemon peel and the vodka. Cover jar tightly and let stand in a cool, dry place for 10 days, gently swirling the mixture in the jar each day.
  • Step 3
    At the end of 10 days, strain mixture through a fine mesh sieve; discard lemon peel. Return vodka mixture to jar.
  • Step 4
    For syrup, in a medium saucepan, combine sugar and eater. Bring just to a boil, stirring until sugar dissolves. Cool to room temperature.
  • Step 5
    Pour syrup into the lemon-infused vodka; stir to combine. Cover and chill overnight. Strain liquid again through fine mesh strainer or permanent coffee filter.
  • Step 6
    Pour mixture into clean bottles using a funnel; fasten lids. Store in the refrigerator. Makes 7 cups.
