Aperol Spritzers are very popular right now. So, we came up with our own version. There aren’t as many flavors in ours as in the store bought version. But, we think it’s cleaner with more potent flavors. Salty things are great choice to serve with this drink. Serve it with pickles, potato chips, olives and salty meats such as Prosciutto. Because this is an Italian drink, Prosecco is generally used. But, there are other options. Other sparkling wines to use: Champagne Cremant de Loire Cava American Sparkling

Ingredients
- 1 valencia, hamlin or seville oranges
- 28 grams vodka
- 397 grams unsweetened orange juice
- 28 grams rhubarb
- 4 teaspoons sugar
- 425 grams dry sparkling wine
- 142 grams club soda
- ice
How To Make homemade aperol spritz

Step 1Chop rhubarb into crescents

Step 2Peel one orange leaving on the white pith

Step 3Slice the second orange. Cut the slices in half to form crescents.

Step 4Add peel and pith of one orange, chopped rhubarb, orange juice and sugar to a pot.

Step 5Heat on the lowest setting on your stove.

Step 6When the mixture is warm, add the vodka and simmer for an additional 20 minutes.

Step 7Stir to make sure that sugar is dissolved and to ensure that mixture doesn't get too hot. You don't want steam.

Step 8After 20 minutes, remove mixture from heat and strain.

Step 9Refrigerate until chilled.

Step 10Add ice to glass.

Step 11Add sparkling wine, club soda and 3 ounces of the orange rhubarb mix to the glass.

Step 12Garnish with an orange wedge and serve.
